Organic meat, fruit and vegetables are always on the menu at Geshaview.The dishes are prepared using natural organic products which to a great extent brings the unique taste of the Bulgarian meals.
There are also many distinctive features of the Bulgarian cooking that contribute to its exceptional taste. When preparing meals with organic meat for example, Bulgarians start with cooking the meat and gradually adding the rest of the ingredients. In this way they save time and effort as the entire meal is prepared using only one pot or saucepan.
The combination of organic milk or organic yoghurt with other products is also very typical for the Bulgarian national cuisine. It enriches the technology of food preparation and makes the dishes healthier.
Another distinctive feature is the thermal processing of the products, they are simmered slowly on low heat which enables their nutritive qualities to be retained and, again, makes the food taste much better.

Bulgarians love a barbecue, the weather is ideal and at Geshaview you will be able to enjoy your own barbecue in one of the firepits around the village.
The meats that are used for barbecues in Bulgaria are: lamb, mutton, pork and beef. Bulgarians also produce home-made sausages and other specialities which are very tasty and especially appetising with a good red wine.
You could also use a ‘Sizzle Table’ where you can self cook your own delicious food supplied by our home delivery service.

Bulgaria has an abundance of fruits, including apples, peaches, watermelon and plums and more exotic fruit like quinces, figs and others.
The best of Bulgaria’s fruit and vegetables are grown organically (without fertilizers) on the plains to the south and north of the Stara Planina mountain range.
Berries, orchard fruits, melons and grapes (for the table as well as for wine) are among the many superb fruits and are probably the best in Europe and certainly among the cheapest.
Bulgarian grapes are so famous that much of their crop is exported. Fruits may be eaten fresh, as jams or jellies, or as very thick spoon sweets to be served with glasses of cold water or Turkish coffee, made into fruit compotes, and occasionally into fruit drinks or fruit soups.

Bulgaria is full of vegetable plots and orchards, and fresh organic fruit and vegetables are the secret of Bulgarian food.
Bulgarian vegetables are very tasty as they are grown naturally, organically (without fertilizers) which makes the Bulgarian organic vegetables a lot juicier than they are in the west.
Organic salads are on the menu in Bulgaria throughout the summer months while during the winter months the Bulgarians love hot stews with home produced, organically grown vegetables and tasty combinations of all things Bulgarian fire up the taste buds.
Fresh, organic vegetables can be bought from the greengrocer’s shop in the Courtyard, but for the more adventurous, you can also buy organically grown vegetables in the outdoor markets which you’ll find in most towns and villages. Here smallholders from the area sell whatever produce is currently in season, as well as herbs, nuts, sunflower seeds, dried fruit and pulses.
All vegetables used in the restaurants at Geshaview will be sourced from local, organic growers.

On sale everywhere in Bulgaria are natural fruit juices, without preservatives, manufactured by Bulgarian (and foreign) producers.
Boza, a boiled-grain drink is popular in Bulgaria. Boza is a thick, fermented beverage (containing up to 4% alcohol) with a sourish or sweetish taste, it is made with various kinds of flour (barley, oats, corn, wheat), but for the best quality millet flour is used.
Beer is very popular in Bulgaria and one local brewery, in Veliko Tarnovo, is Boliarka, which makes a range of lagers.
Bulgarian wine has a long history. Bulgaria is said to be the oldest wine producing region in the world. Evidence of vine planting and wine production in Bulgaria dates back 6,500 years. Bulgarian wines are famed for their exceptional quality. Bulgaria is one of the world’s major wine exporters.
The unofficial national drink of Bulgaria is Rakia, a fruit brandy. Rakia is usually made from seasonal fruits such as grapes, plums, pears, apricots, apples, cherries and peaches. Traditionally, many Bulgarians distill Rakia at home, using fruits that are in season. Rakia sold commercially is made of grapes and has an alcohol volume of 40%! Prime quality Rakia are used as a traditional medicine.

In general tap water (which is chlorinated) is generally considered safe to drink throughout Bulgaria. Usually Bulgarians drink water from the tap and the water can be used for cooking, washing and bathing. However, as when travelling to foreign countries, the Western taste and diet may make the water unpalatable. Mineral water is sold everywhere and it is of excellent quality.
As part of the eco-friendly, sustainable living policy of the Geshaview village we are in the process of geological surveying of the site to locate a source of natural spring water for the village.
We hope this will make us self supporting for water in the future.
